After giving constant
care to his vineyard all year round, the vinegrower eventually
picks up the fruit of his labour.
The actual time of picking is a decisive moment because
it is important for the future quality of the wine, and
only starts after several checks in the vineyards.
First, early in August the vinegrower will notice a change
in the berries : "the véraison".
The white berries become translucent, and they grow bigger,
more juicy and softer. At the same time, their taste changes
as they become sweeter, less acid, more pleasant to taste.
